What’s For Lunch

I go through food phases where I can eat the same thing for days and weeks. A few months ago, I went through a hummus phase. I have eaten hummus before, of course, but I never had any as good as Natasha’s. After eating her freshly made hummus I became obsessed with it and started making it from scratch daily for weeks. Before my brother was due to arrive for a small visit to DC, I asked him what kind of food he liked, and what he wanted me to cook for him. He told me “hummus”! I was so excited that my brother liked hummus also, that I served it to him every meal for his whole visit. He told me that he makes it with extra garlic and uses a “mihras” (mortar and pestal) to soften the ingredients. I guess we went through the same phase together.


Here was a typical dinner during my hummus phase. Hummus with olive oil, meat, pine nuts, and pita bread.


Here is where I started to get extravagant with the hummus adding tomatoes, avocados, eggs, harrisa,meat, pine nuts, and pita. My husband looked at it and said, ”Do you have enough protein there?” He asked if I started bodybuilding.



After my brother left I got tired of hummus and since the weather turned cold again I switched to nice hot bowls of chili. My husband was working from home one day and surprised me with some homemade chili when I got home from work. It was really delicious, but since I was still into hummus I didn’t think too much about it. After I got tired of the hummus, I moved right into the chili. My enthusiasm for my new dish forced me to expand on my husband’s recipe, so I went out and bought bags of vegetables.




I’ve been going to work more often lately, so I brought a big bowl of chili everyday for weeks. My husband is used to me so I don’t have to give him any explanations about my “phases” or my moods. I could eat grass and fried rat and he wouldn’t even question me. He knows that I don’t like to be asked too many questions so he leaves me a alone with my “unique” habits. At work though it is another story. My coworker asked me every single day what my plans were for lunch and if I brought my own. Each day I would tell her “chili”. Her answer was always,” Again?”
Yes, again and again and again and she should thank her lucky stars that I haven’t had a fried fish phase.
Last Monday while I was making a new batch of chili, I told my husband that I shouldn’t bring it to work anymore. Everyone was starting to notice how often I had been bringing chili to work and I think they think I have some sort of problem.
I haven’t had chili since Tuesday and I miss it. Time for a new dish. Hmmm…. if I only knew how to make the Egyptian Kushari!!!!!!! That is the dish I had everyday when I went to Egypt.

    hey love your blog :)
    please can you tell what the egyptian dish taste like? i'd never heard of it before today.
    i love hummus too. but every time i wanted to get some here (France) all i could find was the type with lemon juice in it which is kinda sour...and i'm not a big fan of that one heh.

    Yay for Koshari...here is my recipe:

    1) Boil 1 cup of dried lentles for 15 minutes in 3 cups of water. Before adding lentils tho..heat some oil and then put the lentils in that then add the water. When the 15 minutes is done, add 1 cup of white rice. Boil for 5 more minutes , add a tablespoon of salt stir then cover it with the lid on and put the head low for 30 minutes.

    2) Boil elbow maccoroni or whatever kind of mac...ziti whatever...set aside. IM sure you know how to do that.

    3)heat up a can of chickpeas ( what you use to make hummus!)

    4)Time for carmelized onions...the hardest part of all!!! Cut 2 onions into Half moons...place in bowl and salt the onions and mix. Heat some oil in frying pan ...add onions...DO not leave the onions! Put flame on low-medium heat. The onions ..you want a brown-caramel color...not black! If you leave them and watch tv...regardless it does take a while...have patience...and just watch them...they may turn black if you watch TV! LOL. place onions on a plate lined with a papertowel.

    5) Shata: Just a can of tomato sauce...add some garlic...how much you like...3 Tb or so of Vinegar...some red pepper flakes...season with salt. Heat for 20 minutes until garlic is tender.

    All these components mixed together make for one really mad good delicious koshari :)

    I only use the recipes for a general guide, and I don’t measure. My version includes chick peas, lemon juice, extra garlic :), tahina and a little water. Once it is ready I decorate it with small pieces of grilled meat, parsley, toasted pine nuts and olive oil.

    For the chili, I use onions, ground beef, tomato sauce, garlic, chili powder/spice, and I add different colors of peppers, some carrots for sweetness, and beans.

    Pure honey tounsi, I agree, I like baba ghannoush better too… I just learned yesterday watching a cooking show that eggplants have almost no nutritional value. Never thought a vegetable could not be good for you

    Oh Gosh...the pressure...the only confusining part maybe the rice+lentil mixture...

    Lemme explain...you could cook the rice which ever way you like and the lentils boiled until tender both seperately, but I enjoy how the two cook together and the muchy delicious texture that results ( which is step #1 detailed recipe) But if thats too confusing...like I said just make rice and lentils seperately :)

    My little boy hates vegetables, but does love his hummus. His dad and I call him the prince and the chickpea because he knows if we ever try and sneak in canned chickpeas instead of the more tasty dried ones you make yourself. But because he does hate his veggies, I have to sneak them in anywhere I can; To hummus mix I also add fresh flat leaf parsley that is in pesto like form. It not only adds a little variety to the standard hummus, but a fresh kick and some extra antioxidant qualities. I have to up the lemon and garlic to balance out the parsley when I add it to the hummus.

    Your food on display looks good enough for food and wine magazine. Man your husband is one lucky fellow.

    And tell me you don't have any tunisian food craving .. hmm a good makruna bloody red with tons of garlic and home made harissa ;-) I cook a ,ot and everybody is in love with tunisian food. As soon as they know that i bought a tunisian plate they will drop to say hi just in case ;-)) The old days ...

    Mmmmmmm, hummus with all those other ingredients makes it a real meal, and a yummy one too, rahter than just a snack! I like the idea!!! Especially as I am not a lover of peas, but mixing up is awesome!!!

    The chili mixes in the markets are good -- lots of great chili powder mixtures and you don't have to add the cayenne if you don't want to.

    Do you use canned or fresh chickpeas?

    A favorite Indian dish of mine that has chickpeas is channa masala but I've only prepared it once and wasn't too impressed -- will take me a few more lifetimes to prepare it correctly.

    i have phases like you as well. i can eat the same thing day after day, get bored and switch to something else.

    i can get that egyptian recipe for you if you'd like. i'm sure my MIL knows how to make it. she's egyptian and makes fabulous food.

    Hummus! :D

    I made several attempts at making hummus here in Romania, but I have never successfully pulled it off. Do you have your recipe to share? Like, with instructions? I've read many and never seem to get them to work out properly.

    Oh, what I wouldn't do! I *must* be able to create hummus like that! The idea with the meat is something that never occurred to me and now I must try it. But only after I learn the hummus.

    Oh master! Take pity on us...
